Island Cookie & Cracker Co. (“Cat Island”), a maker of all-natural cookies and cheese crackers, has announced the closing of a convertible note offering to a group of investors based in New York and Toronto in its first round of financing to third-party investors. Proceeds of the transaction will be used to increase its production capacity and marketing budget; and for general corporate purposes.

Cat Island was founded in 2014 by Leslie Bullock, who previously served as pastry chef at several of New York’s most renowned restaurants. The company’s products are sold online at catislandcookies.com and at select retailers in Texas, Louisiana, Mississippi, Arkansas and Tennessee.
